The eighth head chef of L’écrin values his sauces, striving for the perfect wine pairings. In keeping with the restaurant’s name, which means ‘jewel box’, a wooden box is presented at the end of the meal – lift the lid and you’ll find little cakes and bonbons, shining like jewels.
