At the small bar, you can admire a superb array of Colombian spirits before heading into the minimalist dining room with views of the open kitchen where guests can interact with the chefs at work. The cuisine here is based around a single tasting menu called Idiosincrasia that takes you on a journey around Colombia’s different regions (Amazon, Andes, Antioquía, Pacific and Caribbean coasts) and aims to introduce guests to the biodiversity of this stunning country.
