This unique restaurant, in the heart of the Sierra de Albarracín mountains, occupies what was once a wool factory, hence its name (“fulling mill” in English) and its location on the banks of the Guadalaviar. The charm of the building is evident, thanks to the preservation of its original structure, and its quiet natural setting with its plethora of waterfalls. In the elegant dining room, furnished in the rustic style of the region with seating for just 18 guests (adding to its exclusive feel) and relaxing views of the countryside from most of its tables, enjoy delicious dishes prepared by María José Meda, a self-taught cook who has stepped away from the typical cuisine usually found in this area. From the appetisers onwards, her consistent, contemporary cooking with a creative touch showcases the natural bounty of Teruel province and the woods around the property (her Tierra tasting menu focuses on truffles, trout, and ingredients sourced from local vegetable gardens and meadows etc). A number of attractive guestrooms, plus a simpler restaurant called Alba del Sur, are also available.
